Ricketts’ culinary journey is as remarkable as his dishes. At the age of 27, he began his career as a dishwasher and quickly rose through the ranks to become one of the Philippines’ most celebrated chefs. His first triumph, Sensei Sushi, paved the way for Mecha Uma, an acclaimed omakase-style restaurant. Now, with La Chinesca, Ricketts marries his passion for Mexican cuisine with his expertise in Asian flavors, marking a new chapter in his illustrious career. The menu showcases a fusion of Filipino and Mexican flavors, highlighting locally sourced ingredients and Ricketts’ meticulous techniques.
